Gingerbread Men Coffee Cup Cookies
Have you ever seen a cookie idea that made your jaw drop? Well, that is the way I felt when I saw Mike at Semi Sweet Father’s Day Hanging Mug Cookies. I was mesmerized by his creativity and photo. Everything about it was perfect. As I stared at his gorgeous photo my head started spinning with ideas. I was so excited I knew I wouldn’t get any sleep until I made these gingerbread men coffee cup cookies.
I have always had a thing for gingerbread men. When I was a kid, I often would think of them as little elves that would decorate and bake while we are sleeping. I could just imagine them helping each other measure the sugar and stirring a big bowl of icing so I could decorate Christmas cookies first thing in the morning. It never happened but, it made me think how cute it would be if they added marshmallows to your cocoa? And by the way, the marshmallows smiling by the cups were an idea given to me by Sweet Sugar Belle. She suggested adding them to the cup of cocoa like she did with these Easy Snowman Marshmallows. She is wonderful! Thanks Callye! You rock!!

I don’t hand cut cookie dough often but, sometimes I think it is worth it. It is not hard if your dough is really cold and you don’t have a million cookies to make. Before I decided to hand cut these cookies, I looked and looked through my cutters trying to find a design or pattern I could work with and gave up. Hand cutting allowed me to have the exact pattern I wanted.
Begin by using a food safe marker to outline the marshmallows in the gingerbread man’s hand.
Then, with a #2 tip, outline and flood the body with the cinnamon color icing and let it dry.
Next, with a #2 tip and the white icing, apply the icing to the arms and legs.
Then, outline and flood the marshmallow in his hand with the white icing.
Now, add 2 buttons on his tummy and the dots for his eyes and his hair.
While the white of the eyes are wet, add the 4 mm sugar pearls.
Next, with the pink icing, add cheeks to the gingerbread man and the marshmallows. I forgot to add the other marshmallow in this photo but, you can make 2 or 3 for each man.
I got a few new #1 PME tips from Karen’s Cookies the other day and I really like them. They are perfect for adding details like the mouth on our gingerbread friend. I added this one with a #2 tip and didn’t like it. It was a little thick. If you look at the first photo of the gingerbread men and the marshmallows, you will see it is much better.
Once your gingerbread man cookie is decorated and completely dry, follow Mike at Semi Sweets instructions for adding the hook so your cookie will hand on the cup.
The only thing I wish I had done differently to these is make them with this gingerbread cookie recipe. I am not going to stress over it though because I will make them for my guests this Christmas. I am sure they will go great with cocoa, tea or coffee.
If you would like to make your own hanging cup cookies cutters, Mikes idea is perfect or you can follow these instructions here or follow the links below to see more hanging cup cookies.

I’m dying from cuteness overload and I love it! The tiny marshmallows are the perfect touch!
So, did you attach the gingerbread man with a little cookie hook like Mike did?
Yes! I guess I should have added that to the instructions! LOL
I added it. Thanks Sue!!!!!!
Thanks! I figured you did, but thanks for the clarification:)
This is awesome, Lisa! Thanks so much for linking to my hanging neck tie cookies. I blushed when I read these adorable gingerbread men were inspired by them. You’ve inspired me so many times in the past and it’s an honor I could return some of the inspiration your way. I love the design of this cookie, too! It looks like he’s rescuing little marshmallow kids from danger. 😛
Thank you so much Mike for the great inspiration!! I still go back and look at your Father’s Day Cookies. I adore them!!! You seriously opened a new world of decorating for us!!

Thanks Nikki! I am thrilled that Mike made the tie cookies and that Sweet Sugar Belle made the snowman marshmallows. Cookie people are so fun to be around!
Oh my gosh, these little guys are so darn cute! The mini marshmallows get me every time I look at the pictures! 🙂 I’d love to have one to garnish my cocoa anytime!
The smiling marshmallows were Sweet Sugar Belle’s idea. She is so smart! I want to make some to keep in the cabinet for my cocoa all year long. I also want to make her snowmen! They are so CUTE!!

Thanks D.J. The marshmallows were Sweet Sugar Belle’s idea. She made the marshmallow snowmen and they were so dang cute that I wanted to make them to keep on hand. She encouraged me to make the marshmallows for these. She is awesome!!
These are the cutest little gingerbread men I’ve seen! I love the way they look like they’re about to toss the marshmallows right into the mugs. Too adorable! My entire family and my in-laws are huge tea drinkers. These are such cute little treats to serve along with a warm cup of chai (tea with Indian spices and milk). Thanks for the cute idea and thanks to Mike for the great inspiration!
I didn’t even think of using them for tea Aida! Thanks for the idea. I have some tea drinkers in my family and I think they will like them also. Bear hugs!!
These are so sweet and I love the marshmallows too. Pinning!
Thanks Beth! The marshmallows were Sweet Sugar Belles idea. I linked to the marshmallow snowmen she made. She is super creative!!

These are adorable! Love the little matching marshmallows with the faces that go with…well done, my friend!
Thanks Terri!
The eyes on these cookies are great! That extra little touch really stands out! : )
Thank you Heather;)
Do you think Plastics in Print could reproduce your art work to make a cookie cutter? I’m guess many followers of your blog would purchase it.
Hi Diane. Thank you for the suggestion for Plastics in Print but, it isn’t the way I want to go with my designs. I have a plan for making cookie cutters in the future and I want them to be affordable and dishwasher safe. LOL For now, I am happy to provide the free templates for my readers;)
Sounds like you have a great plan in store for your readers, I’m looking forward to it. 🙂
