Marshmallow Cookies

Do you like marshmallows? I got hooked on making homemade marshmallows a little over a year ago. They are so much better than the ones you can buy in stores. The best part is you can make them in all kinds of different flavors and cut them into many different shapes. As I was making the last batch, I got an idea to make cute marshmallow cookies. The reason I think they are cute is because of the added little flowers and the tiny pink cheeks. What do you think? What to make some with me?

Oh yeah, I forgot to mention that if you are a beginner or if you are looking for a project to do with the kids, these cookies are for you. They also make a cute little gifts because who wouldn’t love those little faces? Okay. Enough talk. Lets make some marshmallow cookies.

Supplies for Marshmallow Cookies:

Square cookie cutter (any size will work)
White 15 Second Icing
Pink 15 Second Icing
4 mm Black Edible Pearls

Royal Icing Flowers- Apple BlossomsDaisy, or you can use Fondant Flowers

You may be wondering why the marshmallow cookies look kind of round instead of square because I told you to use a square cookie cutter. Well, that is easy to explain.

Easy Marshmallow Cookies by www.thebearfootbaker.comFirst, cut a square cookie from the dough. Before you bake it, trim off the edges with a sharp knife.

Next, flood the top and let it dry for about 20 minutes. This will make the icing look like it is in separate sections.
Then, flood the rest of the cookie with the white icing.
While the icing is wet, add the pink cheeks with the pink icing, the edible pearl eyes, and let it dry overnight.

Then, outline the cookie with the white icing. Use a little icing to glue on the royal icing flowers.

Simple Marshmallow Cookies thebearfootbaker.comI have to admit something. I couldn’t work the camera fast enough to catch the smoke coming up from the cup of cocoa. So I added the smoke in PicMonkey for a better picture. I normally don’t do that but that I couldn’t resist this time. Hot cocoa needs to look hot don’t you agree?
