Coconut Cake Recipe

This Simple Coconut Cake Recipe is made from a white cake mix and topped with Coconut Buttercream frosting and coconut chips.

Ingredients

  • 1 box of white cake mix
  • 3 egg whites
  • 1 box of coconut cream instant pudding and pie filling
  • 1 cup of coconut milk
  • 1/3 cup of vegetable oil
  • 1 1/2 cup of sweetened shredded coconut
  • 1 tsp coconut extract
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees.
  • Grease cake pan.
  • Mix cake mix, coconut milk, oil, egg whites, cream of coconut pudding mix, vanilla and coconut extract and mix. Fold in the coconut flakes.
  • Bake at 350 degrees for according to the box mix directions.

This cake is really simple to make, but the best part is frosting it and adding the coconut chips.

  • Preheat oven to 350 degrees.
  • Grease cake pan.
