Make It Yours™ Oatmeal Raisin Mama Bear Cookies

This time I decided to add a few old fashioned mix-ins to make oatmeal raisin cookies. They remind me of cookies my grandma made for us after school. Delicious oatmeal and raisin cookies with a touch of cinnamon that is sure to bring back some good memories of when you were a kid.

- 1 cup Country Crock® Tub
- 1 cup firmly packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 tsp. vanilla extract
- 3 cups old fashioned oats
- 1 1/2 cups all-purpose flour
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup raisins
- 1 tub of vanilla frosting
- Chocolate covered raisins
- Chocolate cookies for the bear paw
- Toasted coconut
Preheat oven to 375°.
Beat Country Crock®, light brown sugar and granulated sugar in large bowl with electric mixer until light and fluffy, about 2 minutes. Beat in egg, egg yolk and vanilla. Beat in oats, flour, cinnamon, baking soda and salt on low speed just until blended. Stir in raisins.
Drop by rounded tablespoonfuls 3-inches apart on ungreased baking sheets.
Bake 8 minutes or until edges are lightly golden. Cool 1 minute on wire rack; remove from baking sheets and cool completely.
When the cookies have cooled completely, cover the top with vanilla frosting.
Place one chocolate cookie and four chocolate covered raisin to look like a bear paw. If the chocolate cookie is too large, use a round cookie cutter to make it smaller.
Cover the remaining frosting with the toasted coconut.
- Beat Country Crock® Butter, light brown sugar, and granulated sugar in a large bowl.
- Beat for 2 minutes until it’s light and fluffy.
- Beat in the egg, egg yolk, and vanilla.
- Next, add the oats, flour, cinnamon, baking soda, and salt.
- Mix on low speed and mix until just blended.
- Drop the cookie dough on an ungreased baking sheet or Silpat about 3″ apart.
- Bake 375° for 8-10 minutes or until the edges turn a light golden brown color.
- Look at those beautiful cookies!
- Cool on a wire rack.
- Let the cookies cool completely before you begin to decorate.
- You need one chocolate cookie for each cookie. You may have to cut the cookie with a smaller round cookie cutter depending on how large you make your cookies. My mama bear cookies were a little small so I trimmed the chocolate cookie before I added it to the paw. Be warned, it will get a little messy.
- Cover the tops of the cookies with frosting. You can make your own or buy a tub of vanilla at the store to make things easy.
- Add the chocolate cookie and four chocolate covered raisins to the cookie while the frosting is wet.
- Sprinkle the remainder with the toasted coconut and enjoy!
