Piña Colada Smoothie Recipe

I have a confession. I am obsessed with the Piña Colada flavor. There is something about the pineapple and coconut together that rocks my world. A few years ago, I would buy the little frozen Piña Colada cans they have in the freezer section of the grocery store and add some ice. They were ok, but I decided to try my hand at making my own Piña Colada Smoothie Recipe with fresh pineapples and I am glad I did.

Not only did my house smell incredible from cutting the pineapple, but the Piña colada Smoothie was delicious. My daughter drank most of it because, well, she is my daughter after all and she loves it as much as I do. Now if I can only learn how to open a coconut without using a machete I could totally live on an island and drink these all day.

Ingredients

  • 1 1/2 cups of fresh pineapple
  • 1/4 cup of cream of coconut
  • 1 1/2 cup of ice
  • Add ingredients to a blender and mix.
  • Makes one large smoothie or 2 small ones.

The first time I made these I used coconut milk and although it was good, I had to add honey and a few other things to make it a little sweeter and it still wasn’t the flavor that I crave. Then, I tried the cream of coconut and BINGO! This was the Piña Colada flavor I was looking for. I found a post by The Kitchen that tells the difference between coconut milk and coconut cream.
