Strawberry Cookie Recipe | The Bearfoot Baker

My daughter called me and asked if I wanted to go to a few yard sales with her last Saturday. We love to find furniture that is structurally sound but, needs to be refinished. We found several pieces we really liked and a few unexpected things like a cookbook with a strawberry cookie recipe that I had to try.

This really nice lady had a bunch of cookbooks from the Strawberry Festival in Florida. She said her aunt sends them to her every year. The one I got had a strawberry cookie recipe that was made from a strawberry cake mix. It inspired me so I tweaked it a little and made an icing recipe to pour over the cool cookies. I am very pleased with the way they turned out.

Ingredients

  • Cookies:
  • 1 Box of Strawberry Cake Mix
  • 2 eggs
  • 1/3 cup of vegetable oil
  • ½ cup of fresh diced strawberries
  • Icing:
  • 1/3 cup of finely diced strawberries with juice directions below
  • 4 cups of powdered sugar
  • 3 tablespoons of vegetable oil
  • 1/3 cup of strawberry juice

Instructions

  • Cookies:
  • Preheat oven to 350° Mix cake mix, eggs, and oil. Add the strawberries and spoon onto baking sheet lined with parchment paper. Bake for 10-12 minutes. You want to remove them before they turn brown.

  • Icing:
  • Dice 1/3 cup of fresh strawberries and place them in a bowl. Use a potato masher to mash them a little and place them in the refrigerator for about an hour so it will make fresh strawberry juice. You will need 1/3 cup of the juice. (You may need to use more strawberries depending on ripeness.)

  • Once you have 1/3 of fresh strawberry juice, mix the powdered sugar, oil, and strawberry juice until smooth. Add the diced strawberries and mix. Place cookies on a bakers rack and pour icing onto the cookies. Place a bowl under to catch the excess icing.

  • Once the icing is dry, store them in an airtight contain in the refrigerator. This recipe makes approximately 40 cookies.

The hardest part of making these cookies is applying the icing. It is not really hard but it is a bit messy.

I had icing on my hands and didn’t want to mess up my camera so I grabbed my phone and took this picture. I added it because I wanted to show you how I iced the cookies. I placed the cookies on my bakers rack with plastic cutting mats under them and spooned the icing over each cookie. I had a few bowls under then to catch the excess icing. Once the dripping icing almost stopped, I removed the bowls and left the cookies to dry on the racks. Next time I make these, I will replace it with a better picture.
