I didn’t like lemon cookies when I was a kid. Boy was I stupid! They are amazing and now are among my favorites. These lemon cookies are soft and covered with a delicious lemon glaze. You have to try these.
I shared this recipe last year with Lil’ Luna and felt it needed to be shared again. This recipe came from a friend of mine who volunteers at camp. She is a nurse, she bakes and sews. Don’t you love her already? Anyway, let’s get to the recipe.
One box of lemon cake mix
2 eggs
1/3 cup of oil
4 cups of confectioners’ sugar
3 tablespoons of oil
1/3 cups of fresh lemon juice
3 tablespoons of water
zest from one lemon
For the cookies, mix the cake mix, eggs, and oil.
Then, roll them into even balls and place them on a cookie sheet. I love using my Silpat for these. Bake at 350 degrees for 6-7 minutes. Oven times may vary so keep an eye on them.
I like my cookies soft so I remove them from the oven before they start turning brown on the bottom. They are round and will settle and become flat as they cool. If you like them brown on the bottom, then leave them in for a little longer but, watch them closely.
Cool the gorgeous lemon cookies on a wire rack that has been placed on a baking sheet covered in parchment paper. Once the cookies are cool, mix the lemon glaze and pour over the cookies. I like to repeat this process so the glaze is a little thicker.
Store the leftover icing in an airtight container in the refrigerator.
