Pineapple Mango Smoothie

I had planned on making some cute sugar cookies for fall yesterday but it didn’t happen. I also had royal icing transfers that I wanted to share with you on Tuesday and that didn’t happen either. Truth be told, I was sick. To be more accurate, I had food poisoning after eating cheesecake from a local restaurant. It wasn’t the wonderful treat I wanted it to be, but I’m better now. Still weak, but I need to build my strength and energy so I feel totally normal and not like a tired old zombie. A pineapple-mango smoothie might help me get back on track.

If you think this looks good, believe me, it tastes even better. Maybe it is because I love pineapples, mangos, and honey so I guess it would make sense for me to love a pineapple-mango smoothie. Maybe you should make one for yourself so you can be the judge.

I am working hard to get back on track and I have baked some fall cookies for you and I’ll try to give you more than one royal icing transfer template on Tuesday to get my fall baking and planning back on schedule because I don’t like being behind.

Pineapple Mango Smoothie

Ingredients

  • 1 cup of orange juice
  • 1 cup of fresh mango
  • 2 cups of pineapple
  • 1 banana
  • 4 tablespoons of cream of coconut
  • 2 tablespoons of honey
  • Ice-optional

Instructions

  • Add all ingredients to a blender and blend until smooth. Makes 2 servings Enjoy.

I have really enjoyed creating smoothie recipes for all of us this summer. I hope I will get inspired by more gorgeous fruit next year. Smoothies are great for helping us get our recommended daily servings of fruit. I love fruit and I am determined to get healthy and hey, if drinking a pineapple-mango smoothie once a week will help with that, then I am all for it.
