Christmas Thumbprint Cookies-1 Cookie Mix 3 Ways

How many cookies do you make during the holidays? Are you overwhelmed? I may have a simple solution you can make from a cookie mix. One bag of cookie mix can be made into 3 different cookies. Christmas tree, Santa hats and Rainbow Sprinkle Christmas thumbprint cookies and no one will know they were made from a cookie mix.

I don’t know why but this year I am loving Santa Hats. I made some meringue Santa Hats for Jennifer at Not Your Momma’s Cookies the other day and it inspired these. They are cute and delicious so what’s not to love.

Supplies for Christmas Thumbprint Cookies:

Betty Crocker Cookie Mix
Buttercream Icing Recipe in Red and Green
Sprinkles-White and Rainbow
Candy Beads or Sixlets for the Tree Topper
Snowflakes for Santa’s Hat

Christmas Thumbprint Cookies via thebearfootbaker.comIt all being with this cookie mix. On the back there is a recipe for roll out cookies. Follow it to make the roll out cookies but don’t roll it out as you would for cut out cookies. Follow the instructions below.

Rainbow Sprinkle Christmas Thumbprint Cookies:

  • Mix the dough following the roll out cookies instructions on the back of the cookie mix.
  • Roll the dough into 1/2″ balls.
  • Roll the balls in the sprinkles immediately or the sprinkles won’t stick to the dough.
  • Place them on a cookie sheet.
  • Use a 1/2 tsp. measuring spoon to make the dent in the center of each cookie and bake as directed.
  • Let the cookies cool completely.
  • Mix 1 1/4 cups of powdered sugar with 2 tablespoons of milk and place into 2 bowls. Add red and green food color and fill the thumbprint cookies.

  • Mix the dough following the roll out cookies instructions on the back of the cookie mix and add a few drops of red food coloring.
  • Roll the dough into 1/2″ balls.
  • Roll the balls in the sprinkles immediately or the sprinkles won’t stick to the dough.
  • Place them on a cookie sheet.
  • Use a 1/2 tsp. measuring spoon to make the dent in the center of each cookie and bake as directed.

Once the cookies cool completely, use a #21 star tip to pipe a swirl on each cookie and top with a snowflake or a white candy bead.

Follow the steps for the Santa hast but use green food coloring for the dough and for the buttercream frosting. When the icing is wet, sprinkle with a few rainbow sprinkles and top with a yellow candy bead.

I didn’t have any green non-pareils so I rolled the tree thumbprints in green sprinkles.
