Is there anything better than coconut buttercream frosting? I am a sucker for coconut especially when it is in cake and frosting form. There’s just something about a coconut cake covered with coconut buttercream in the spring. It is fresh and a symbol of blooming flowers and baby birds in a cute little nest chirping for their mommy to feed them. Don’t you get all of that from a slice of coconut cake?
Okay maybe I am weird and expect too much from a simple coconut cake covered in delicious coconut buttercream frosting and giant coconut chips, but that’s just me. Please love me in spite of my weirdness. Okay?

Today we are talking about the coconut buttercream frosting, but soon I will share my coconut cake recipe and how to make these cute little chocolate eggs. I wanted to fill the eggs with some yummy peanut butter but to be honest, I had to learn how to make them first. If you make them thin on the side it will make your egg assembly frustrating. They say don’t cry over spilled milk but what about cracked chocolate eggs? Do you cry when you break three in a row? Nope. Just remelt the chocolate and start over. Let’s just say I have more than enough practice melting chocolate now. 😉
