As soon as your knife slices into citrus you can smell that sharp fragrance that screams summer. If you can’t make it to the farmers market you can use cookie stamps to help you make lemon, lime, and orange cookies. If you really want to taste the summer flavor you can add a little citrus flavoring that will fill your heart with happiness and give your tastebuds a real summer treat!

Flexible Cutting Mats

  • Begin by making some cookie dough. I knew I wanted to make lemon, lime and orange cookies so I divided the dough into three equal parts.
  • Then I rolled them out on my handy dandy little flexible cutting mats covered them with plastic wrap.
  • Place them in the freezer for five to ten minutes so the dough will be chilled but not frozen.
  • Remove the dough from the freezer and peel the mat away from the dough. Lay the mat back on the dough and flip it over. Remove the plastic wrap.   • Use the circle cookie cutter to cut a circle, but don’t remove the cutter from the dough.
  • Place the interchangeable handle on the back of the fruit stamp and press it into the cookie dough. Since you left the cutter around the cookie the dough won’t loose it’s shape.
  • Lift straight up to remove the stamp.

  • Repeat until you cut out all the “lemons, limes, and oranges” you want.

  • To make things interesting cut some in half and bake according the the recipe directions.

  • Let the cookies cool completely before you begin decorating.
  • Fill each section of the fruit with the appropriate colored royal icing.
  • Use a turkey lacer, boo boo stick or a toothpick to pop the air bubbles and push the icing in place.

  • Place the cookie in front of a fan to help the icing dry shiny.
