How to Make Fun Awesome Little Easter Confetti Cookies | The Bearfoot Baker

It feels like spring! This week the temperature has been over 70° and it’s the middle of February. Today the high is going to be 76° and tomorrow, are you ready for it, the high is going to be 78°! It’s hard to stay inside when the weather is calling your name and the temperatures are knocking on eighty’s door. I don’t know if winter will come back and give us another blast of cold or not so I’m going to enjoy this spring weather and make some Easter Confetti Cookies. Bunnies are cute and you can never have enough so let’s celebrate with confetti cookies!

You may think it’s weird that these mini bunnies and eggs aren’t decorated. That was on purpose. Sometimes confetti needs to be sparkly and sometimes it doesn’t. When it’s almost 80° in the middle of February it’s hard to sit at the kitchen table and decorate. Therefore, naked cookies seem to work.

Supplies for Easter Confetti Cookies:

Cookie Cutters:
  • Mini Bunny Rabbit Cookie Cutter
  • Mini Egg Cookie Cutter
AmeriColor Soft Gel Paste Food Colors:

These are the colors that were used to make this confetti but feel free to use any colors you want. Can’t you imagine all the fun color combinations we can make?

Tools:
  • Flexible Cutting Mats– Great for rolling out cookie dough
  •  Begin by mixing the cookie dough. Don’t bake it yet because we need to color it first.

  • Once you make the dough, divide it into equal parts according to the number of colors you want to use.
  • Make an indentation in the center of the dough and add a drop or two of color.

  • Once you start mixing the food gel color into the dough you may need to add more.
  • Mix the color well throughout the dough.

  • Now it’s time to color the other dough. Isn’t it pretty!

  • Roll out the dough.

  • Cover each with a piece of plastic wrap and roll it out.
  • Place it in the freezer for about ten minutes.

How to Make Simple Easter Confetti Cookies | The Bearfoot Baker

  • Remove one of the mats from the freezer.
  • Place it dough side down on the counter.
  • Remove the mat by lifting one corner of the mat off of the dough, but first, place the other hand on the back of the mat and press down gently. Add pressure as you pull the mat away so the mat doesn’t stick or break the dough.
  • Continue until the flexible mat is removed from the back of the dough.
  • Lay the mat back on the dough and flip the mat, dough, and plastic wrap over.
  • Carefully pull the plastic wrap off of the top of the dough. You might have to hold the dough as you peel the plastic wrap away.

  • Now that you have removed the dough from the mats, it’s time to cut out the cookie shapes.

  • Go crazy and cut out all the bunnies and eggs and bake according to the recipe directions.
  • Store in an airtight container.

Don’t you think mini rabbits and mini carrots would make a cute set of Easter confetti cookies? What about ducks and eggs? I can’t wait to see what fun confetti cookies y’all make!
