I too am an empty nester .my kids are grown with families of their own and my husband has passed so I am always looking for recipes for one or two . Just made this and it’s in the oven can’t wait to try it when it’s ready . only thing I did different was to put it in a little 5 by 5 baking dish hoping that doesn’t mess it up . I love that the recipe is so easy and so few ingredients . please do more small batch recipes . I think there’s a real need for them . thank you for sharing this one !

Made this evening in a cast iron skillet in the oven. Love how it’s not too sweet and with a little ice cream, it’s heaven. Also an empty nester so going from cooking for an army to just me and my SO is challenging. Thank you for the recipe!

I use frozen peaches as my base, and I place the halved recipe on top and then microwave for five minutes. Cool whip is the topping put on it.
