Hi Hallie,

Sorry I'm so late replying to your comment. I've been under the weather but I'm feeling better and trying to catch up.
I honestly don't know how I would make it high altitude. I looked online and found this: https://curlygirlkitchen.com/cookies-cream-cake/. I've never tried this recipe but it might be what you're looking for.

Hope this helps.

delicious but mine was a huge mess :/
i should have used full fat cream cheese maybe or frozen the icing longer. I just put the whole thing into a 9 in round baking pan before it slid off the cake board
tastes like ice cream with oreos

How would you make this cake if you wanted to save time and just use chocolate wafers? What would you suggest using in place of the Oreo crane center and how much?

Thank you love this recipe idea for summer gatherings. No oven required is a big plus!

Best,

I think Lois used lemon as the flavouring instead of/in addition to the vanilla. That is what i plan to do because cream cheese goes well with a tangy flavour such as lime etc.

Thanks Lois! I'm glad you tweaked the recipe for a consistency that works for you. Do you have a photo of the Lemon Icebox Cake? I'd love to see it!

I've made this cake 3 times in the past couple months and it's always a hit. We made one with lemon and it was great, too I've learned a couple things that make building the cake a bit easier. If the cookies break while you're separating them, use the broken ones in the middle. The frosting was a bit runny the first couple times I made this and I had a difficult time keeping the cake upright. I decreased the whipping cream by a quarter cup and it solved that issue. My first cake wasn't exactly round and I finally figured out to turn the stand as I place the cookies. I stand directly over the cake and place each cookie directly over the cookie that I'm lining it up with below. Wha-La! My cake is round and decreasing the whipping cream made it a more manageable consistencey. I highly recommend this cake!

In reply to <a href="https://thebearfootbaker.com/icebox-cake-recipe/#comment-29505">Cynthia Harmel</a>.

Hi Cynthia,

That cake stand came from one of those amazing discount stores like TJ Maxx or Marshalls years ago. I can't remember which one, but it came in two different sizes and I love them both. I wish there was a cake stand store where we could buy really fun, cute, and beautiful cake stands in any color we want. Maybe someone will open it for us one day. ;)

Gorgeous!!! Looks yummy too!! But i gotta ask: that CAKEPLATE!!!!! Wherever did you get that? I love it! The only way it could've been even more perfect (as if...) was if it were Lime green! I am obsessed with that color, especially when it's combined with turquoise (this plate!!!)

Thanks again,
Cynthia
