Hi Eric,

The tutorial for the chees is on Sweet Sugar Belles blog here: http://www.sweetsugarbelle.com/2012/03/pizza-cookies/

Basically, you make light ivory royal icing and add it in two layers. Spread the first layer and leave some sauce showing. Let it dry for about 20 minutes and then add a more ivory that looks like strings of cheese.
