Place the sugar in a large bowl.
In a separate small bowl, mix the water, extract and food coloring. Mix until all the sugar is the same color.
If the sugar is dry, add a little water until it feels and looks like wet sand.
Press the sugar mixture into the candy mold. Press tightly and remove the excess.
Let the cubes dry for about 30 minutes in place then, transfer them to a platter or wire rack and let dry for a few hours.
