Ingredients

  • 1 cup Country Crock® Tub
  • 1 cup firmly packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp. vanilla extract
  • 3 cups old fashioned oats
  • 1 1/2 cups all-purpose flour
  • 2 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup raisins
  • 1 tub of vanilla frosting
  • Chocolate covered raisins
  • Chocolate cookies for the bear paw
  • Toasted coconut

Instructions

  • Preheat oven to 375°.
  • Beat Country Crock®, light brown sugar and granulated sugar in large bowl with electric mixer until light and fluffy, about 2 minutes. Beat in egg, egg yolk and vanilla. Beat in oats, flour, cinnamon, baking soda and salt on low speed just until blended. Stir in raisins.
  • Drop by rounded tablespoonfuls 3-inches apart on ungreased baking sheets.
  • Bake 8 minutes or until edges are lightly golden. Cool 1 minute on wire rack; remove from baking sheets and cool completely.
  • When the cookies have cooled completely, cover the top with vanilla frosting.
  • Place one chocolate cookie and four chocolate covered raisin to look like a bear paw. If the chocolate cookie is too large, use a round cookie cutter to make it smaller.
  • Cover the remaining frosting with the toasted coconut.
