How to Make a Simple Homemade Cherry Pie

Cherry pie with vanilla ice cream is a perfect way to end dinner. You don't have to be a professional baker to make a delicious cherry pie with this recipe.

Ingredients

  • 5-6 cups of fresh pitted cherries or you can use frozen cherries
  • 2 tablespoons of lemon juice
  • 1 cup of sugar
  • 1/4 cup of corn starch
  • 1/4 teaspoon of almond extract
  •  

Instructions

  • Pit the cherries and place them in a bowl.
  • Add other ingredients and mix.
  • Place in the refrigerator until it's time to add it to the pie. It will give the cherry mixture time to rest and make your pie delicious.

  • Roll one of the dough discs out and place it in the bottom of the pie pan. Gently press the dough into the sides and remove any air bubbles.
  • Place in the fridge for about 30 minutes. Remember when I said you need to keep things cold?
  • Roll out the second disc of dough and cut even strips to use for the lattice.
  • To make the lattice you'll need to weave the strips over-and-under themselves like a piece of lattice fencing. It may sound hard but it's not.
  • Lay some vertical strips across the top of the cherry pie leaving equal space between each strip.
  • Fold every other strip back on itself with the bend near the middle.
  • Next, place a strip horizontally across the middle of the pie on the strips you didn't bend.
  • Fold the bent strips back across the pie to create the look of the lattice.
  • Repeat laying the dough 'over-and-under' until you cover the pie with the strips to form the lattice crust.
  • See it's not hard! Tuck the top pieces under the bottom and crimp the edges to seal it.

Brush the top of the pie with an egg wash:

  • An egg wash is just one egg beaten with one tablespoon of water. Brush it over the top of the cherry pie.
  • Sprinkle the top with sugar.
  • Place it in the fridge for about an hour before you bake it.
  • Then, bake at 400° for 20 minutes.
  • Reduce the oven temperature to 350° and bake an additional 30-40 minutes. The pie is done when the crust is golden brown and the fruit is bubbling.
  • Remove the cherry pie from the oven and cool on the counter.
  • Then, place the pie in the fridge to chill for about 4 hours before you serve. To serve it warm, microwave it for a few seconds and top with vanilla ice cream. The perfect ending to dinner.
