Prepare the strawberries:
Wash them and cut the cap off.
Hull out the center for the cheesecake filling.
Cut a small piece off the bottom so the strawberry will stand.
Graham Cracker Crumbs:
Place in a Ziplock bag and hit it with a wooden spoon until you have a bag full of crumbs.
Set aside for later.
In a mixer, mix the cream cheese, lemon juice and powered sugar until creamy.
Melt the chocolate.
Pipe the cheesecake filling into the strawberries. Then dip the top into the graham cracker crumbs. Next, dip into the melted dark chocolate and sprinkle the top with some of the graham cracker crumbs.
Store them in an airtight container in the refrigerator.
