Slice apples into thin slices and remove the centers with a small cookie cutter. Once the apples are cut, dip them in the eggs and then into the flour mixture. Then, dip them into the eggs again and then the flour mixture so the batter will be nice and thick. Then, carefully drop them into the canola oil. Fry until it is golden brown and turn it over and fry the other side. As the apples get done, place them on a paper towel for a minute or so to let the oil drip off. Then, transfer to a baking rack that is sitting on a baking sheet to drain the rest of the oil. Serve while warm and top with ice cream and caramel sauce.
Warm canola oil to about 365-370 degrees in a skillet or saucepan.
