Once you outline and flood a cookie the possibilities are endless. This tutorial is a basic “know how to outline and flood” your cookies so you can create anything. I mean anything! You can do it! What are you waiting for?

The Cookie Network How to Outline and Flood Cookies with Royal Icing:

This tutorial isn’t full of amazing tips that are going to have you decorating like you were born with a piping bag in your hand. It will, however, help you understand icing a little so you can learn to decorate. I plan on going into more detail in the future, but I think this will help you get started. 

Just remember:

  • When outlining, hold the piping bag away from the cookie, gently squeeze the piping bag, and let the icing fall gently onto the cookie. Don’t hold it close to the cookie and expect it to do what you want. Hold it at a 90° angle, gently apply pressure and guide the bag around the cookie where you want the icing to land. 
  • Flood the cookie with enough icing to fill it but don’t use so much you make it overflow over the sides. 
  • If you start to notice you’re going to overfill it, use the turkey lacer or toothpick to pull the icing back to the middle or remove some of it before it overflows. 
  • Use a fan to dry your cookies. Just place the fan in front of the cookies and let them dry. It will cause them to have a nice shine on the icing. 
  • Let them dry completely before you place them in bags or on a platter.

Royal Icing Colors:
Any color(s) you want! Here’s a little tip for you, food gel colors work better than food colors. The food colors are very liquid and will change the consistency of your icing. Soft gel Pate Food Colors will change the color of your icing without totally changing the consistency of your icing. 

You can use the food color, but be aware you will probably have to adjust the consistency of your royal icing by adding more powdered sugar.
