Coconut Cake Recipe
Do you like coconut? Do you like cake? If you do you need to try this coconut cake recipe with coconut buttercream frosting and topped with coconut chips. This recipe is simple to make and will satisfy any coconut craving you might have. It will remind you of a dessert your grandma served after a wonderful Sunday dinner.
The best part is it’s super simple to make from a box of white cake mix.

Ingredients
- 1 box of white cake mix
- 3 egg whites
- 1 box of coconut cream instant pudding and pie filling
- 1 cup of coconut milk
- 1/3 cup of vegetable oil
- 1 1/2 cup of sweetened shredded coconut
- 1 tsp coconut extract
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees.
- Grease cake pan.
- Mix cake mix, coconut milk, oil, egg whites, cream of coconut pudding mix, vanilla and coconut extract and mix. Fold in the coconut flakes.
- Bake at 350 degrees for according to the box mix directions.
This cake is really simple to make, but the best part is frosting it and adding the coconut chips.
- Preheat oven to 350 degrees.
- Grease cake pan.
- Mix cake mix, coconut milk, oil, egg whites, cream of coconut pudding mix, vanilla and coconut extract and mix well.
- Fold in the coconut flakes.
- Bake at 350 degrees for according to the box mix directions.
- Let the cake cool and then add the coconut buttercream frosting.
Do you dirty ice your bundt cakes? I do when I want it to look pretty because no matter what I do I get cake crumbs ever where. Dirty icing helps keep it clean and pretty.
To keep your cake stand looking nice and clean, line it with strips of parchment paper. Once your cake has been dirty iced (crumb coated) place it in the freezer for about 15 minutes.
Then add the “pretty” layer of coconut buttercream frosting.
I don’t know about you but trying to make frosting smooth on a bundt cake is no easy task. I usually just do the best I can and call it a day.
Or you can cover it with coconut chips and it will look irresistible and no one will ever know there is a “not so smooth layer of frosting” under all those chips.
Remove the parchment paper and fill any gaps or holes with the coconut chips.
Normally I make videos for you that show every step of the process. For some odd reason, I didn’t show how to make the cake but how to frost it instead. I think I love the coconut buttercream frosting so much I decided to make a video on that instead of the cake. Oh well, I will try to do better next time and make a video os the coconut cake recipe.
