Decorated Thumbprint Cookies-Simple Sunflowers
The other day I received a text message from a friend. She told me I should make decorated thumbprint cookies for my blog. What a great idea!
We talked about cute designs and all kinds of different flavors combinations and the possibilities seemed endless so I couldn’t wait to get started. Since its fall, and sunflowers are my favorite flowers, she suggested I start there and I totally agreed!
I have a great thumbprint cookie recipe but, I wanted to do something that is super simple with a fall flavor. When I went to the store I came across a package of gingerbread cookie mix. On the back, it has directions for roll-out cookies and that is exactly what I was looking for. Better Crocker must have read my mind.
Supplies for Decorated Thumbprint Cookies:

Betty Crocker Gingerbread Cookie Mix (it requires 1/2 cup (1 stick) of butter, 1 Tablespoon of water, 1 egg)
Betty Crocker Rich & Creamy Frosting, Vanilla, 16 oz container
Yellow food color
Brown food color
Powdered Sugar
Chocolate Jimmies
Piping or Ziplock Bag
# 10 Piping tip
Follow the directions on the back of the bag for the roll-out cookies. Instead of rolling them out, roll them into balls. They do spread so you may want to make the balls a little on the smaller side.
Bake them according to the directions on the package. Once you remove them from the oven, use an individual measuring teaspoon to make an indentation in the center while the cookies are hot. You can’t do this once they cool so work quickly.
Mix a little over half the tub of frosting yellow and the remaining frosting brown. The icing needs to be thick enough to form a peak for the sunflower petals. If your isn’t that thick, you may need to add some powdered sugar to thicken it a little. Add a little at a time until you get the consistency you need.
I used a Ziplock bag to pipe the brown icing and a piping bag fitted with the #10 tip for the yellow.
- Pipe some brown icing into the center of the sunflower. Make a mound so it won’t get berried the rows of petals.
- Sprinkle it with the Chocolate Jimmies.
- With the yellow icing and #10 piping tip, make a row of petals on the outer edge of the cookie. To do this, pipe a dot and pull away to form a peak. Go all the way around the edge of the cookie.
- Repeat the process for the inner row of petals by piping the petals in between the petals on the first row.
These cookies are very simple to make and when we use the mix it will make a lot of cookies so it would be great for a bake sale or fall festival. They don’t stack well so I suggest packaging them flat in a box.

My favorite flowers. I love anything yellow but I love the height you get from sunflowers and the longevity compared to other flowers. My ex used to buy me sunflowers at the farmer’s market every Thursday and most of the time, they were still alive when he got me another bunch the following week.
