Lemon Cookies Recipe
I didn’t like lemon cookies when I was a kid. Boy was I stupid! They are amazing and now are among my favorites. These lemon cookies are soft and covered with a delicious lemon glaze. You have to try these.
I shared this recipe last year with Lil’ Luna and felt it needed to be shared again. This recipe came from a friend of mine that volunteers at camp. She is a nurse, she bakes and sews. Don’t you love her already? Anyway, lets get to the recipe.
Supplies for Lemon Cookies:
One box of lemon cake mix
2 eggs
1/3 cup of oil
Lemon Glaze:
4 cups of confectioners’ sugar
3 tablespoons of oil
1/3 cups of fresh lemon juice
3 tablespoons of water
zest from one lemon
Lemon Cookie Recipe
Ingredients
- Lemon Cookies:
- One box of lemon cake mix
- 2 eggs
- 1/3 cup of oil
- Lemon Glaze:
- 4 cups of confectioners' sugar
- 3 tablespoons of oil
- 1/3 cups of fresh lemon juice
- 3 tablespoons of water
- zest from one lemon
Instructions
- For the cookies:Mix the lemon cake mix, eggs and oil. Shape into balls and bake at 350 degrees for 6-7 minutes.
- For the glaze:Mix all the ingredients in a bowl and pour over cool cookies.
For the cookies, mix the cake mix, eggs and oil.
Then, roll them into even balls and place on a cookie sheet. I love using my Silpat for these. Bake at 350 degrees for 6-7 minutes. Oven times may vary so keep an eye on them.
I like my cookies soft so I remove them from the oven before they start turning brown on the bottom. They are round and will settle and become flat as they cool. If you like them brown on the bottom, then leave them in for a little longer but, watch them closely.
Cool the the gorgeous lemon cookies on a wire rack that has been placed on a baking sheet covered in parchment paper. Once the cookie are cool, mix the lemon glaze and pour over the cookies. I like to repeat this process so the glaze is a little thicker.
Store the leftover icing in an airtight container in the refrigerator.
I have added these cookies to my summer cookie list and to my holiday cookie list. They are so good I want to enjoy them all year and I hope you do as well.

These cookies look mouth-watering delicious! Also, when I clicked on the previous Lil’ Luna post, I couldn’t help but notice how your photography has improved in just a year’s time. (Not that they were bad at all before!) You’re a super-talented photographer and this post really showcases your growth behind the lens. Your skills are so inspiring, Lisa!
Thank you so much Mike! That really means a lot to me. My photography goal is to enjoy the journey and improve a little each day.
