It’s finally summer and it’s beautiful outside. Are you one of those people that eat ice cream more during summer? The only thing I don’t like about it is I have a tendency to let it drip on my shirt. Well, that’s not a good thing. So you let’s make ice cream cookies so we don’t have to worry about the real thing dripping on us.

Oh, wait! We can make ice cream cookies that have little drips on the cone! Drips on the cone are good, but drips on the shirt aren’t. I really like these cookies!

Cookie Cutters:

Royal Icing Colors:

Ice Cream Cone Color-Mix a small amount of Sunshine Yellow Gel, Totally Brown Gel, and Outrageously Orange Gel until you get the ice cream cone color you like.

How to Make Simple Ice Cream Cookies | The Bearfoot Baker

  • Bake your cookies and let them cool completely before you begin to decorate.
  • Make a template or freehand the design on the cookie with a food-safe marker so the decorating will be simple. I like to free-hand the pattern, but if you make a template they’ll all look the same. If you don’t make a template the cookies will look more like the real thing, you know, kind of like they’re fresh from the soft serve ice cream machine.

  • Decide if you want to make vanilla ice cream cones, chocolate ice cream cones, or you can make both because everyone will want one of each.
  • So now that your pattern is on the cookies it’s time to grab your royal icing and begin decorating your cookies. Let’s start with the cone.
  • Outline and flood the cone with the ice cream cone color. You can outline the cone and let the outline dry for a few minutes and then flood it or you can outline and flood at the same time without the wait. These were done without the waiting on the outline to dry because it makes a nice clean edge so that’s a good look for a cone. Just go slow and make sure you don’t make the royal icing flood over the side of the cookie.
  • Now outline the ice cream with the white royal icing. Let it dry for a few minutes then flood the top and the middle sections.
  • Let it dry for a few minutes so the top layer of the royal icing will crust over so there will be a separation between the layers of ice cream so it will look like actual ice cream in a cone.

  • You can outline and flood the second section of the ice cream or you can wait and do the second section with the fourth section. Does that make sense?
  • We need to add the lines to the cone so I suggest outlining and flooding the ice cream after the details on the cone are added that way you’re piping the white royal icing once instead of twice.
  • Okay, now for the lines. Start on one of the corners of the cone and pipe a line to the opposite corner.
  • Pipe a line above that line. Pipe a line below that line. If your cone is bigger than mine you’ll need to make more lines. Pay attention to spacing because that’s what will make it look like a real cone.
  • Repeat the process and make the lines in the opposite direction so it will look like an ice cream cone.
  • If the lines on the cone are a little on the fat side you can use your turkey lacer or a toothpick to smooth them off a little. You can see how it’s done in the video below.
  • Let the royal icing dry completely.

  • Now outline and flood the remaining two sections on the ice cream and while you’re at it, add a few dots to the cone. You’re all done!

This would be a great project to do with the kids because they love ice cream and cookies. They’d have a blast making them. If they make them their cookies a little messy it’s okay because they can create a new style and design. I think it’s a pretty ‘cool’ way to decorate with them and have some summer fun because it’s summer is the time to play and make cookies. Well, anytime is the best time to make cookies. Who am I kidding? LOL
