How to Make Awesome Pineapple Cookies – Video

I didn’t plan on making pineapple cookies, but I saw an opportunity and I took it. These cookies are a byproduct of another set of cookies I’ve been working on this week. I needed a small circle cutter and couldn’t find one that was the right size even after I searched through all my cutters. So I grabbed my car keys and started to leave and it hit me. I did have a circle cutter that was the right size. The only thing about it was it was attached to a bigger cutter. It’s Sweet Sugarbelle’s Donut Cookie Cutter.

The circle in the center of the donut was the perfect size for what I needed. Once I used the center I was left with a donut cookie. If you’re not in the mood for donuts, go healthy and make some pineapples.

With a few little tips, you can make them look just like real pineapple slices.

I sure wish they served pineapples like this when I was a kid. Can you imagine eating your fruit and veggies if they all tasted like sugar cookies! Total game changer!

Supplies for Pineapple Cookies:

Recipes:

Cookie Cutter:

  • Sweet Sugar Belle Donut Cutter or you can use a large circle and cut the center out with a smaller circle. The small cookies are made with Callye’s donut cutter and the big ones are made with a large circle and a small circle cutter. So don’t stress and use what you have on hand. Remember to save the center for the next project I’m going to share with you.

Royal Icing Colors:

  • Yellow – The yellow in this post was made with Americolor Lemon Yellow with a touch of Americolor Gold or you can use whatever yellow you prefer.

Tools:

  • Detail Paintbrush – You’ll need one to make thin lines on the cookies.
  • You’ll also need a paintbrush to blend the colors together. More on that below.
  • Brown Food Gel Paste
  • White Food Gel Paste
  • Turkey Lacer

I can’t believe I didn’t plan on making these, but I’m sure glad I did. The best happy mistake I’ve made in years!

Outline and flood:

  • Begin by cutting out the donut cookies but don’t bake them just yet. Cut a few random ‘v’ shapes into the edges to make them look like real pineapple slices. Cut as many or as few as you want and then bake them. Let them cool completely before you decorate.
  • Next, outline and flood the pineapple cookies with yellow royal icing and let them dry completely.
  • Mix some brown food gel color with a little water.
  • Paint a few lines around the center and the outer edge of the cookies.

Now that we’ve added the colors let’s blend it:

  • Repeat the painting process with the white food gel color.
  • Dip the wider brush into some water and use a paper towel to wipe off the excess. Your brush needs to be damp and not wet. Gently pull the lines toward the center of the cookies until they look faded.
  • Repeat with the lines around the inner of the pineapple cookies.
  • Airbrush the edges of the cookies with yellow airbrush color. You can see how to do that in the video below.
