Blackberry Cobbler for Two
I am an empty nester. I am not crazy about it either. One of the hardest things about it for me is learning to cook for two. My kids always had friends over so it seemed I was cooking for a small army. Don’t get me wrong, I totally enjoyed cooking for them but, now that it is just me and hubby, we don’t want to look at a huge dessert and feel like it is going to be wasted or better yet on my waist. So I made this blackberry cobbler for two recipes so we don’t want to end up eating the entire thing.
You can make this recipe in Ramekins or in a small cast-iron skillet. I like it in the Ramekins better because I can serve it in the bowl it was baked in. Fewer dishes to wash makes me happier. Another great thing about this recipe is you can use different fruit such as peach, blueberry, or cherry.
Ingredients for Blackberry Cobbler for Two:
1/2 stick or 2 oz of butter, melted
1/2 cup of self-rising flour
1/2 cup of sugar
1/4 cup of milk
a Pint of Blackberries (you will have some leftover)
- 1/2 stick or 2 oz of butter melted
- 1/2 cup of self-rising flour
- 1/2 cup of sugar
- 1/4 cup of milk
- Pint of Blackberries you will have some leftover
- Place blackberries into an oven-safe dish. Mix all other ingredients and pour over the blackberries. Bake at 350 degrees for 40-45 minutes or until golden brown. Oven times may vary. Serves 2
Once you have your cobbler mixture, sprinkle some blackberries at the bottom of your baking dish. You can use as many as you want as long as there is room for the cobbler mixture.
Then, pour your cobbler mixture over the beautiful berries and bake. It is such a beautiful thing!
To me, a cobbler isn’t complete without a scoop of vanilla ice cream. I love how the flavors complement each other. I make cobbler all year long and it is a dessert we enjoy in the fall but, making it with fresh berries makes it even better. If you have a small army to feed, here is my cobbler recipe that will feed your kiddos and their friends.

Such an awesome idea! Sometimes, as a food blogger, I’m overwhelmed by all of the food I create – luckily, my husband has hungry coworkers who are more than happy to gobble them up 🙂 But, it is so nice to make a dish with nothing leftover and no worries about how we’re going to fit it in the fridge 😉 Plus, cobbler is the best!

I love recipes for two! My husband and I don’t have any kids yet, so when I bake a regular-sized cobbler, we end up eating the whole gosh-darn thing ourselves. Bad idea. But this looks to be the perfect size for just the two of us. Thanks for the inspiration!

Thank you thank you thank you Lisa!! I never make desserts (except sugar cookies) because I know I’ll eat them. All of them. Oh sure, I’ve tried making 2 dozen chocolate chip cookies and taking them to work but only 16 cookies will arrive. This is something I don’t have to feel too too guilty about. As everyone else said, there will be NO sharing. Luckily I live alone and can overpower my dog if she tries to eat some.
This is going into my recipe book, picture and all. Please share more desserts-for-two recipes if you have them!

Just made this. It was good. There is enough for two. I will make it enough and next time I might use blueberries or raspberries.

This may be a silly question but should one use self-rise flour when making this cobbler? I made it this evening with the ingredients as listed and it wouldn’t get really done. It stayed a bit too gooey.

I used the recipe using blueberry pie filling that I had canned this year from fresh picked blueberries. It was marvelous!!! I may use less sugar next time with this since my filling was already sweetened. This is a Winner! Peach is next!!
What size cast iron skillet for this recipe?
This recipe is good halved. I use frozen peaches as my base, and I place the halved recipe on top and then microwave for five minutes. Cool whip is the topping put on it.
I’d love to make this recipe for my parents anniversary dinner. I believe I have a cast iron skillet that is 7 X 7 or 8 X 8. Could you please tell me the size of the skillet in this recipe?
