How to Make Happy Mini Ice Cream Cone Cookies is the second set of cookies I’ve made with the skull/scarecrow cookie cutter from Sugarbelle’s Mini Shape Shifter Cookie Cutter Set. I’m having a blast! These are the same cutters that were used to make the How to Make Strange Little Mini Alien Cookies and you can do almost anything with it. This set is amazing!

I love these cookie cutters and I’m working on a set now that uses one of Sugarbelle’s regular-sized cutters with a cutter from this cute mini set. (This royal icing is 15-second icing in decorating bags with #2 decorating tips. You can use decorating bags, bottles, or tipless bags.)

  • Ivory mixed with a tiny touch of brown
  • Blue
  • Pink
  • Brown

  • Cookie Turntable Swivel for Cookies and the Minimat
  • Fan to dry your cookies so they’ll dry nice and shiny! Just place the decorated cookies with the wet icing in front of the fan and once the icing is dry they’ll look nice and shiny.

Before we begin, look at the shape of that cookie. Can you think of a cookie design you want to make with it because it’s fun decorating these little mini’s?

  • Begin by baking and cutting out your cookie shape, make your royal icing colors and let the cookies cool completely before you decorate them.
  • Draw a line on your cookie with a food-safe marker so it will be easy to pipe the cone and the ice cream.

  • Outline the top of the ice cream cone with the ivory-colored royal icing and use a turkey lacer, scribe tool, or a toothpick to smooth it out and to pop any air bubbles.
  • Let the icing dry for about ten to twenty minutes until the surface forms a crust.

  • Outline and flood the bottom of the ice cream cone cookies with the ivory royal icing and pop those pesky little air bubbles.

  • Outline the ice cream of the cookie with the blue royal icing.
  • I found a blog called Corianne’s Custom Cookies where she talks to us about royal icing issues. At the bottom of the tutorial, she talks about how her icing caved in or sunk in the middle so she piped some zig-zag lines so it would hold the icing up and keep it from falling in the middle. I’ve tried piping lines and a circle in the middle and it works. My icing stayed nice and firm and didn’t cave in. You should check her tips on royal icing. Thanks, Corianne for the wonderful tip!
  • Flood the ice cream and let it dry for about twenty to thirty minutes before you add the rest of the ice cream on the cone of the cookie.

  • Once your royal icing has had time to dry, paint the lines on the bottom of the ice cream cone. Mix one part brown Edible Art Edible Paint with one part Yellow Edible Art Edible Paint and make criss-cross lines. This one was painted with a 30/0 Script Liner Paint Brush.   • Now it’s time to add more ice cream! Pipe some blue ice cream at the bottom of the ice cream and make it overflow onto the top of the ice cream cone. Let it dry for a little while and then we’ll break the crust it forms later.
  • Pipe brown royal icing at the top of the ice cream. Have fun with the design, but be sure to leave room for the eyes and smile.

  • While the brown royal icing is wet, add some colorful sprinkles. Sprinkles are the “thing” right now so I’m sure you’ll be able to find some adorable colors and shapes.

  • Pipe the eyes with black royal icing or you can use a nonpareil, 4mm black pearl dragees. Whatever you want to use.
  • Pipe a small amount on your turkey lacer and add it to the black while the black icing is still wet.

I have a confession. Making royal icing candy eyes makes me very happy! I’ve made so many of them because piping eyes on the cookie isn’t that fun to me. I’m always afraid I’ll make them too large or too small so I use candy eyes. If you want to see me struggle with it watch the How to Make Happy Mini Ice Cream Cone Cookies Video below. I finally gave up and grab the piping bag wishing I would have used my candy eyes. It’s funny so be sure to watch me struggle!

  • Use the same Edible Art Edible Paint that you used on the cone to paint the smile.
  • Add pink royal icing cheeks and look at your little pieces of cookie art.
  • Wait! we need to smash the ice cream on the bottom!

Simple Little Mini Ice Cream Cone Cookies | The Bearfoot Baker

  • I can’t believe I almost forgot this step because it’s so fun to do!
  • Gently smash the royal icing at the bottom, but be careful and don’t smash too hard because if the bottom layer of icing isn’t dry you could crack it and that would be bad.
  • You can use a fondant sugarcraft ball or your finger to smash it so it will look more like real ice cream.
  • Let your cookies dry completely.
