Do you see bunnies everywhere you look because I’m seeing them in the grocery store, at craft stores, at the mall and even in my yard? They seem to be multiplying by the minute so keep your eyes open for them. Seeing them everywhere gave me an idea for some fun Easter cookies we can make. Let’s make some hanging mug bunny cookies with a little twist. Most hanging mug cookies are placed on coffee cups, but this Easter, let’s do something a little different.

Let’s hang these cute little bunnies on our Easter dessert so everyone can see the fun! All you need to do is fill a glass with a few layers of chocolate cake and chocolate frosting. Then, ‘plant’ a carrot cookie in the cake so it looks like its growing. Next, place the hanging mug bunny cookie on the side of the glass and you will have a unique dessert that will make kids and adults jump for joy! Well, they might not jump, but they will remember this cute dessert!

Hanging Mug Bunny Cookies:

  • Outline and flood the bunny with the white royal icing.

  • While the icing is wet, add the colored bunny tail cookie and let the rabbit dry completely.

  • After the cookie has dried completely, flip it over and pipe some icing where you want to place the hanger. The reason we add the hanger after we decorate the cookies is that if you try to outline and flood the cookie with the hanger on the back, the icing will probably fall off the edges. We want the royal icing to stay on the bunny so we’ll add hanger last.
  • Once you’ve piped some royal icing on the back add the hanger cookie and use some other baked cookies to hold it in place.
  • This is the hard part so listen closely. Don’t touch the cookie until the icing is completely dry. I know that’s difficult, but that’s what we have to do so they’ll hang on the cups.

For the carrot:

I didn’t make a tutorial for the carrot, but here is how you make them:

  • We’ll start with the green royal icing at the top of the carrot first so pipe some green wonky dots at the top.
  • Then, pipe a line from each dot down to the top of the carrot and let the royal icing dry for at least twenty minutes.
  • Next, outline and flood the carrot with orange royal icing and let it dry completely so it’ll fit nicely into the cake without messing up your beautiful flood work.

Dirt on Your Chocolate Cake:

For this next step, you’ll need some Oreo Cookies so grab a bag and let’s get started!

  • The best part of Oreo dirt is you need to make it look like actual dirt by removing the cream filling from the Oreo Cookies.
  • This is a great place to ask the kids for help so grab a few butter knives and bowls and watch how fast they remove the filling. There’s no help like kids removing filling from Oreos. It’s precious!
  • Once the filling is removed place the cookies in a food processor and chop them so they’ll look like a bowl of dirt.
  • Depending on the number of hanging mug bunny cookies you need to make will determine how many Oreo cookies you need to chop. You only need a small amount to look like dirt on the top of the frosting so don’t chop the entire bag.

Assemble Your Dessert Right Before Your Guests Arrive:

You might be wondering how to serve this dessert because you’re putting a decorated cookie into cake and frosting and that could end up causing some problems. Anything wet or moist like a cake can make your royal icing melt and that’s a bad thing. To prevent this from happening you should assemble the dessert right before you serve it so the cookie stays pretty.

  • So for the best results let’s baking the cake after your cookies have dried completely.
  • Bake a chocolate cake and let it cool.
  • Then, place your chocolate frosting in a piping bag fitted with a 1M tip to pipe the frosting. If you don’t have a 1M tip don’t worry because you can use a Ziploc bag with the tip cut off.
  • Once the cake has cooled, cut a circle with a circle cookie cutter that is about the same width as your glass. I used 2 cutters since the glass was narrow at the bottom.
  • Place a circle of cake in the bottom of the glass and then pipe some frosting on it.
  • Next, add a second piece of cake on top of that frosting then add more frosting that piece of cake.
  • Finally, place the third piece of cake on that frosting, but don’t add more frosting yet because we need to plant the carrot.
  • Break the cake in the center and add the carrot cookie inside of the break.
  • Now it’s time to pipe some frosting around the cookie and sprinkle the top with Oreo dirt.
