Happy Birthday You Super Cool Pop

I did it again so please forgive me. I missed a chance to show holiday cookies in time for the holiday.  YEP! That’s what I did.  Holiday cookies were made for Father’s Day, but I didn’t get the tutorial ready in time. So what’s a girl to do? Well, as I thought about it, I decided these cookies don’t have to be Father’s Day cookies because they’ll work for any day of the year. They’ll work well for ‘Happy Birthday, You Super Cool Pop’ birthday cookies, You’re #1 Pops, or You’re the Best Pops EVER Cookies. Let’s have some fun and make “Cool Pop”  cookies for our dads because we love them so much.

Our sweet dads fixed our bikes, helped us build our dog house, and taught us all kinds of things because they loved us. I don’t think we’ll ever be able to repay them but we can make them lots of cookies to show them we love them right back! So let’s get started.

Royal Icing Colors:
(the icing is 15-second icing in tipless decorating bags)
Yellow- Sunshine Yellow Gel
Tan- add a tiny amount of Totally Brown Gel and a tiny amount of Sunshine Yellow to make a pretty tan.
White- Whipped White Gel
Red- Royal Red Velvet Gel

  • Begin by baking your popsicle cookies and let them cool before you decorate them. If they’re warm you’ll have a big ole mess on your hands!
  • After decorating a few popsicle cookies I decided to make a paper template of the drips to trace the popsicle. Using the template made the cookies look the same and were easier than trying to free-hand the design. If you want to decorate them without the template they’ll be just as cute as the ones made with the template so have fun either way.
  • Trace or draw the pattern on the cookie with a food-safe marker so everything will look uniform.
  • Outline and flood the bottom of the cookie with the yellow royal icing. Let the outline dry before you flood them or you can be careful and flood as soon as you outline. Just be careful you don’t add too much icing because it’ll flow over the edge of the cookie.
  • Let the icing dry completely.
  • Once the icing is dry, add two little dots of white icing and add the candy eyes.

  • Outline the popsicle stick with the tan royal icing. I didn’t make it nice and pretty since the cookies are for pops because these are Man Cookies. We all know that man cookies should be a little more rustic and carefree.
  • Use a detail paintbrush to paint lines on the popsicle stick. You can use brown food gel or Brown Edibleart Edible Paint. The good thing about this you can paint it when the royal icing is wet or dry. This cookie was painted while the icing was wet.

  • Place the cookie in a coffee filter and flood the top with white royal icing.
  • While the icing is wet add a few of the Rainbow Nonpareils.

  • Remove the cookie from the coffee filter and pour the nonpareils back into the container. Bridget at Bake at 350° taught us the coffee filter tip and it’s amazing! Thank you, Bridget!
  • Next, paint the mouth with the black Edibleart Edible Paint or black food gel color because every popsicle cookie needs a happy smile. 
  • Pipe the cheeks with the red royal icing.
  • Pipe a nose with the yellow royal icing and use the turkey lacer to push down the peak.
  • Let the cookie dry completely so the icing will stay ‘Super Sweet.’

I really like the popsicle stick on this cookie because the curves make it super cute.

I really like the way the stick is curved because it gives this guy some personality. There are several more plans for this cute cookie cutter and you’ll probably see them soon. It’s such a fun cutter!
