Easter Cake – Bunny Peekaboo Cake
Spring is almost here and I am so glad that I could jump up and down with joy. The snow is melting and before we know it beautiful flowers will start decorating gardens everywhere. As I look at the calendar I realize Easter is not that far away. I guess it’s time to decide what Easter Cake I want to make this year.
I decided to go with a Peekaboo Bunny Pound Cake as my Easter Cake. It’s a good choice because they are so darn cute and bunny cookie cutters are easy to find.
Supplies for a Simple Easter Cake:
- 2 Pound Cakes- You can use your favorite pound cake recipe or you can make it from a box cake mix. I used a box cake mix and followed the instructions but added brown food gel color to the one used to cut the rabbit shapes.
- Bunny cookie cutter
- Small flower cookie cutter
- Brown Food Gel Color

- Begin by making a chocolate pound cake or use a regular pound cake recipe. Remove some of the batter to use for the bunny tails. You just need enough to cover the bottom of a small cake pan.
- Then, add brown food gel to the remaining mix until you get the brown you want and bake according to the recipe directions.
Once the cake cools cut it into slices.
- Use a bunny cutter to cut out the bunny shapes. It is important that you use a cutter that is smaller than the cake slices or the next pound cake mix won’t cover the ears.
I trimmed off the bottom of the bake so the rabbit would look like it is sitting flat.
- Next, cut the tails with the flower cutter and use the same cutter to cut the tail shape out of the brown bunnies you cut out earlier. Place the tails in the brown bunny. Sometimes I had to use two tails since the yellowcake is thinner than the brown slices I cut.
- Next, add a little cake batter to the bottom of a sprayed cake pan and line up the bunnies so they are touching each other front to back.
- Smooch them together a little so each cut will show a bunny. Then, cover with the remaining batter and bake according to the recipe directions.
Remember earlier when I was talking about being so excited that Spring is almost here that I could jump up and down? Well, this little bunny did a little hopping of its own. As I placed the cake batter around the bunny shapes, I gently adjusted the ears and placed batter under them so I was sure the batter would fit all around the bunny. Well, as a result of that the bunny shapes rose with the cake as it was baking. It was like the little guy was trying to escape!
- So now that I know the rabbit will rise to the top, I am going to take this Easter cake to my Easter celebrations. I’ll wait until then to cut it so we can all be surprised to see how far up the cake little ‘Hoppy” makes it.
These ‘Peekaboo Pound Cake” are so much fun to make and they are really simple. This is a great project for the kids. They will have so much fun helping cut the shapes and then seeing the final product. I can’t wait to make more of these with my grandson.

Oh my goodness! Would it be bad to wake up my toddler from his nap so we can make it right now? To stay with the spring theme: lamb, chick, tulip and other flowers would work well too…
