Have you ever seen a cookie idea that made your jaw drop? Well, that is the way I felt when I saw Mike at Semi Sweet Father’s Day Hanging Mug Cookies. I was mesmerized by his creativity and photo. Everything about it was perfect. As I stared at his gorgeous photo my head started spinning with ideas. I was so excited I knew I wouldn’t get any sleep until I made these gingerbread men coffee cup cookies.

When I was a kid, I often would think of them as little elves that would decorate and bake while we are sleeping. I could just imagine them helping each other measure the sugar and stirring a big bowl of icing so I could decorate Christmas cookies first thing in the morning. It never happened but, it made me think how cute it would be if they added marshmallows to your cocoa? And by the way, the marshmallows smiling by the cups were an idea given to me by Sweet Sugar Belle. She suggested adding them to the cup of cocoa like she did with these Easy Snowman Marshmallows. Supplies for Gingerbread Men Coffee Cup Cookies:

15 Second Icing in the following colors:

  • Cinnamon Brown (mix warm brown with a touch of yellow and a touch of red)
  • White Icing
  • Pink
  • Black

Tips # 1 & 2
4 mm Black Sugar Pearls

I don’t hand cut cookie dough often but, sometimes I think it is worth it. It is not hard if your dough is really cold and you don’t have a million cookies to make. Before I decided to hand cut these cookies, I looked and looked through my cutters trying to find a design or pattern I could work with and gave up. Hand cutting allowed me to have the exact pattern I wanted.

Gingerbread Men Coffee Cup Cookies thebearfootbaker.comBegin by using a food safe marker to outline the marshmallows in the gingerbread man’s hand.
Then, with a #2 tip, outline and flood the body with the cinnamon color icing and let it dry.

Gingerbread Men Coffee Cup Cookies by thebearfootbaker.comNext, with a #2 tip and the white icing, apply the icing to the arms and legs.
Then, outline and flood the marshmallow in his hand with the white icing.
Now, add 2 buttons on his tummy and the dots for his eyes and his hair.

Next, with the pink icing, add cheeks to the gingerbread man and the marshmallows. I forgot to add the other marshmallow in this photo but, you can make 2 or 3 for each man.

Simple Gingerbread Men Coffee Cup Cookies thebearfootbaker.comI got a few new #1 PME tips from Karen’s Cookies the other day and I really like them. They are perfect for adding details like the mouth on our gingerbread friend. I added this one with a #2 tip and didn’t like it. It was a little thick. If you look at the first photo of the gingerbread men and the marshmallows, you will see it is much better.

Once your gingerbread man cookie is decorated and completely dry, follow Mike at Semi Sweets instructions for adding the hook so your cookie will hand on the cup.

Easy Gingerbread Men Coffee Cup Cookies thebearfootbaker.comThe only thing I wish I had done differently to these is make them with this gingerbread cookie recipe. I am not going to stress over it though because I will make them for my guests this Christmas. I am sure they will go great with cocoa, tea or coffee.
