Red Velvet Whoopie Pie Cookies
Valentine’s Day is right around the corner. If you have not made plans for the love of your life you might want to consider these cookies. I call them “The One Bag Wonder!” Just some cookie dough, red food coloring and one bag of icing and you can have a batch of Red Velvet Whoopie Pie Cookies.
These look like you have spent a lot of time on them but we know the truth. They say, “I love you” but still allow you to paint your nails and fix your hair for your big date. Right??? My idea of a perfect Valentine’s date is just sitting at home watching something on TV beside by wonderful man! Did I mention I was boring? Maybe this year we might bag up these cookies and head to Starbucks for some hot chocolate…maybe.
Supplies for Red Velvet Whoopie Pie Cookies:
Cookie Dough
No-Taste Red Wilton Food Coloring
White Stiff Icing
Tip #10 or a #12 (I prefer the #12)
Begin by making a batch of cookie dough. Then, add some red food gel. I prefer “No Taste Red” so it doesn’t affect the taste of my dough.
Add food color to the dough and mix until you get the color you want. Let me explain something here. Please use gloves or mix this in a large Ziplock bag. I walked around for 2 days with red hands! It wasn’t horrible but I had flashbacks from high school about Shakespeare and Lady Macbeth! Need I say more? NO! If you don’t know what I am talking about you probably slept through you English class. See Mrs. Elliot, I did pay attention!
Just remember, gloves are your friend:)
Once your dough is mixed this is what you will end up with. Isn’t it beautiful?
Next, cut your shapes out. Since it is close to Valentine’s Day, I decided to use hearts. Don’t be afraid to use different sizes. It will give your platter some character.
See, I wasn’t kidding about the red hands. *Sigh* Live and learn I guess.
I wanted my whoopie pie cookies to look clean so before I baked them I took my finger and gently pushed down the edges of the hearts. Can you see the difference? Once you do this you are ready to bake and let cool.
Let the whoopie pie cookies cool completely. Then, with the white icing , pipe a thick line close to the edge of the heart. You don’t want to get too close because the icing might run over the edge.
Place another heart cookie on top while the icing is still wet. I made 2 different consistencies of icing. I wanted to show you how thick your icing should be. I don’t think the outline icing in the first cookie looks good. It looks alright for a cookie but not a whoopie pie cookie. Your icing needs to be thick enough to support the weight of the cookie you place on top of it.
Let the icing dry over night and you are ready to share with the one you love!
WAIT…. use your imagination and create some hugs and kisses for you special someone!
