Summer time is a time for family, fun, and good picnic food. Every year I look forward to sitting around a campfire and toasting marshmallows for one of our favorite summer treats, Smores. Why not turn our favorite treat into a cookie? You can have Smores Cookies and you don’t even have to build a fire!

They can build their own Smores Cookie and you don’t have to worry about them getting burned at the campfire. Do you remember the scene from the Dennis the Mennis movie where Dennis is trying to blow out the flaming marshmallow by shaking the stick causing it land on Mr. Wilson in the forehead? I love that scene but, you don’t have to worry about that happening with these.

Supplies for Smores Cookies:

Sugar Cookie Dough
White Thick Icing
Square Cookie Cutter
AmeriColor Gel Colors:

Smores Cookies thebearfootbaker.comTo make these smore cookies, make a batch of sugar cookie dough. Here is the recipe I use. Once your dough is made, divide it into to pieces with one being twice as big as the other. You need twice as many graham cracker cookies then you do chocolate cookies.

Color the chocolate with brown AmeriColor Gel or you could use a chocolate cookie recipe like Lila Loa’s. I didn’t want to make 2 types of cookie dough so I chose to color the chocolate. Color the graham cracker dough with AmeriColor Lemon yellow, Ivory and a touch of brown. Mix until all the color is combined and you get the color you want. You might want to wear gloves for this part.

Simple Smores Cookies thebearfootbaker.comRoll out the the graham cracker colored dough out and cut with a square cutter. With a knife or a bench scraper (one of my all time favorite tools) score the dough in half. Don’t cut very deep, you just want the impression of two cookies.

Then, with the point of  a skewer, poke holes into the cookie. This will really sell the idea that it is a graham cracker.

Once you have the graham cracker scored and the holes made, sprinkle with white or yellow sanding sugar then bake.

Smores Cookies www.thebearfootbaker.comNext, place 2 chocolate cookies on top of the icing and let it dry for a few minutes.

Smores-Cookies-with-www.thebearfootbaker.comNext, cover the chocolate cookies with the thick white icing. It needs to be thick enough to hold the cookie so it looks like a thick marshmallow. If the icing is thin, it will not look as good. As you pipe the white, force some to drip off the side of the edge. I know this is something that we normally try to avoid but, it works for this cookie.

Sugar Cookies that look like Smores thebearfootbaker.comI added a little bit of brown airbrushing to the edges of the white icing. I think it makes the icing look like a toasted marshmallow. Well now that you know I am a campfire girl who loves to eat s’mores. What do you like to do in the summer?

Here are some ice cream sandwich cookies I made by coloring the dough. It is a great way to make cookies fast. You can bake and decorate in the same day and let the icing in the middle dry overnight. Super simple.
